La Cristalline d'Agrumes au Coulis de Fruits rouges was our dessert at Le Garden, in the center of Orange. This was citrus fruit (agrumes), mandarines and pink grapefruit slices, in a gelatin, lying in a sauce of red berries and fruit (coulis de fruits rouges). The pale-green, star-shaped slices are carambola, or starfruit. These were bitter, but when they start to go a deep golden yellow they taste absolutely fantastic. [thanks, Chric Hockley]
