The "complet" in this Aïoli Complet refers to the complete meal, of potato, fish, shellfish, green bean, carrot, cauliflower, artichoke and whole boiled egg. Aïoli, more-precisely, is the name of the Provencal garlic (ail sauce (to the left of the main plagte) served with the dish.
